眉茶英文名:Mee属绿茶类珍品之一。外形条索紧结、匀整、灰绿起霜、油润、香高味浓。因其条索纤细如士女之秀眉而得名。
眉茶起源于安徽、浙江、江西三省相联交界处的安徽省的休宁、屯溪、黟县、歙县江西省的婺源和浙江省的淳安、建德、开化一带。中国各产茶省均有眉茶生产其中以浙江、安徽、江西三省为主。是中国产区最广、产量最高、销区最稳、消费最普遍的茶类。
采制工艺
鲜叶采摘标准为一芽一叶和一芽二叶初展选其芽壮叶肥白毫茂密者经摊放、杀青、揉捻、烘坯、锅炒、复烘等六道工序精制而成。
1摊放
眉茶
采回的芽叶必须经过精心拣剔剔除不符要求的鱼叶、叶片及杂质等物。摊放12小时表面水蒸发干净即可。
2杀青
要求高温杀青杀匀杀透青气消失、香气显露才算达到杀青适度。杀青叶含水量都控制在60%左右。
(1)用6SST—30/40连续滚筒杀青机每次利用杀青机作业前必须较长时间的预热滚筒确保吸收足够热源。避免每次投叶产生筒壁及筒体尾部粘叶现象。预热必须启动滚筒运转以防止筒体受热变形。
(2)当滚筒达到杀青温度时即滚筒内空气温度达到110℃—120℃左右时才能投叶作业。
(3)杀青时间的确定:将鲜叶或类似物质从进料盘投入滚筒测定排出滚筒的时间可通过机架前端手轮丝杆机构改变滚筒倾角调控杀青时间长短杀青时间根据不同名优茶、鲜叶嫩度、水分多少确定以杀青适度为准一般春茶为2分钟。
(4)每批鲜叶投叶结束后约经一半杀青时间内应脚踏出叶端机架、使滚筒急剧倾斜快速排出杀青叶、防止焦叶、爆点。
3揉捻:要求揉捻叶组织破碎程度为45至55%为适度;嫩叶要轻揉老叶要重揉嫩叶要冷揉老叶要热揉。
锅温保持70℃左右用单把揉的手法将茶叶左右推揉成条重力推揉达到细胞破碎充分的目的当达五成干时即可。
4烘焙:分三次进行第一次只烘至五成千摊放1~2小时。第二次较低温焙至七、八成干摊放6~12小时。第三次低温焙至足干。
5锅炒:是形成婺源茗眉茶独特品质的关键工序。其法是在保持锅温90℃左右时每锅投叶量约1公斤四指并扰手掌张开拇指朝上小指向锅运用腕力和臂力双手将茶叶从锅底徐徐推向锅沿当茶叶由上自由翻落时双手捧茶轻轻搓捻抖散结块周而复始当炒至六成干时白毫显露出锅再以焙笼文火烘干。
